Boudin is a traditional type of sausage made from boiled potatoes, peeled by hand and left to cool, then mixed with chunks of lard, beetroot (ideal natural preservative), spices, natural flavourings, wine and either cow or pig blood. The mixture is piped into thin natural sausage skins which have been knotted by hand, then hung and left to dry for a couple of weeks. They are best eaten freshly-made. Tussidor butcher’s shop in La Thuile sells an unusual variety of boudin made with all the traditional ingredients plus chocolate!
